Horseradish (Armoracia rusticana) is a pungent perennial in the mustard family, used for thousands of years as a condiment and folk remedy. Its heat comes from enzymatic conversion of glucosinolates to volatile isothiocyanates; the root also supplies horseradish peroxidase, an enzyme used in labs and studied for pollutant degradation.
